Honey Cake


Ingredients:

4 eggs
1/2 cup shortening or oil
1 lemon (juice )
1 orange (juice)
5 cups flour
1 teaspoon baking soda
3 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon cloves
1/2 teaspoon nutmeg
Bring to Boil and Cool :

1 cup strong, black coffee
1 cup honey
1 cup brown sugar
1 cup granulated sugar
1 cup chopped nuts (optional)
Preparation:

Beat eggs well, add melted and cooled shortening or oil.
Add fruit juices.
Add pre-sifted dry ingredients alternately with coffee-honey mixture.
Bake in a 9X12 inch loaf pan in a moderate oven (350 degrees) about 1-1/4 hours.
